Greetings, Success Squad!

I had a happy accident today. I set out to make some low point chocolate peanut butter cupcakes. What I got was a bit more on the chocolate side than I had intended, but they are super delicious (and only 2 SP per cupcake). Yes, I said TWO SMART POINTS (including the frosting)!

They were so good and so easy to make that I'm going to share the recipe!

Chocolate peanut butter-ish cupcakes
Yields 16 cupcakes - 2 SP each:

Ingredients

1 ½ cups Kodiak Cakes Power Cakes Whole grain buttermilk flapjack and waffle mix
3 scoops (90 g) Quest Peanut Butter Protein Powder
2 Tbsp JIF Peanut Powder
3 Tbsp Hershey's Special Dark 100% Cocoa Powder
½ cup Unsweetened Apple Sauce
½ cup Truvia Baking Blend
1 1/2 cups + 1 1/2 Tbsp of cold water

Instructions –

1. Preheat the oven to 350
2. Mix all the ingredients together until smooth like cake batter. It will be about the consistency of cake batter, maybe a little thicker.
3. Spray a regular sized muffin pan with non-stick
4. Fill each cup about halfway or so
5. Bake for 30-35 minutes or until a toothpick comes out clean
6. Cool on a rack when done




Peanut Butter Frosting
Yields 16 servings - 0 SP each:

Ingredients:

5 Tbsp JIF Peanut Powder
4 Tbsp Water
6 Tbsp Sugar Free Cool Whip
(Bonus – add a couple drops of your favorite Sugar Free Flavored syrup like Torani Sugar Free Salted Caramel)

Instructions – Yields 16 Servings:
1. Mix the peanut powder and the water together. The peanut butter will be slightly thicker than regular consistency
2. Mix in the cool whip
3. Let it set in the refrigerator for an hour or two
4. Spread it on a cupcake before you are ready to enjoy it!



Notes:
  1. You can buy the Quest Protein Powder at GNC. Most stores sell individual envelopes (1 envelope = 1 scoop) for about $2.50 each. This way you don't have to buy a huge tub.
  2. You can use different flavors of protein powder with the base cake recipe to make all sorts of cakes :). The base is Kodiak Cakes, applesauce, Truvia and water + 3 scoops of any flavor of Quest Powder. I'd love to hear any variations you all come up with :).
  3. Costco has an awesome deal on the Kodiak Cakes. It's 9.99 for the equivalent of 3 boxes of Kodiak Cakes.
  4. Got a few extra points to burn? Top one with 1 TBSP of peanut butter for an extra 3 SP. You will end up with an indulgent cupcake for 5 SP!!
