TLS Chili from Sandi V
TLS Chili – found on Whole Foods Market website
Makes 4 servings

Ingredients:
1 tsp extra-virgin olive oil (I don’t use this)
½ pound (95% lean ground beef) – I use 12 oz. (after cook weight) ground lean turkey (93/7)
1 large onion
3 cloves garlic, finely chopped
2 Tablespoons chili powder, plus more to taste
1 teaspoon ground cumin
3 cups beef broth (low sodium in can)
2 cups fresh or frozen diced bell peppers (I use fresh and use all colors)
1 ½ cup frozen corn kernels (I use 1 can DelMonte – 7 pts for the can – frozen is less points)
2 (15 ounce) cans no-salt added beans, such as kidney, red, or black (I use 1 red and 1 black)
¼ cup tomato paste
Cookin' it:
In a large pot, heat oil over medium-high heat. Add beef and cook, breaking it up with a spoon until browned, about 5 minutes. (I don’t use the oil and my ground turkey is pre-cooked – so this step is skipped). Add onion and garlic; cook for 5 minutes. Stir in chili powder and cumin. Add broth, bell peppers, corn, beans, and tomato paste (I put my beans in a colander and run cold water on them to remove the juices from the can and it helps eliminate any additional sodium it is packed in). Bring to a boil, lower the heat and simmer, covered, until the flavors blend, 20 – 25 minutes.
